Eye of round, sirloin tip, etc. 1/2 lb. per person Red wine vinegar Olive oil Salt

Freshly ground pepper 1 clove garlic, crushed

Marinate roast overnight in mixture of 3 parts red wine vinegar to 1 part olive oil, using enough marinade to cover one half of meat, adding a lot of freshly ground pepper, salt and mashed garlic clove. Turn occasionally. Place in roasting pan and bake at 400 degrees for 20 minutes per pound if you want it rare, 25 minutes for medium and longer for well done. May also be cooked out on the grill and turned once. This takes longer, but tastes better.
