tablespoons Olive oil

1

pound Ground turkey - white meat

1

pkt Taco seasoning mix

2

tablespoons Flour

¼

cup Soy sauce

1

head iceberg lettuce - shredded

2

lrg Tomatoes - diced

1

bn Chopped scallions

¼

cup Chopped cilantro

2

tablespoons Fresh lime juice

Hot sauce to taste

2

cups Low-fat jack or cheddar cheese

Low-fat or fat-free taco shells

Light sour cream for garnish

Step 1

Directions: Heat a large skillet until hot. Add the olive oil and turkey.

Step 2

Saute often and add the seasoning mix, flour and soy sauce. Cook until turkey is crumbly. Drain the meat mixture to remove fat. In a large bowl, combine the lettuce, tomatoes, scallions, cilantro, lime juice, hot sauce and cheese. Stuff the taco shells with turkey, then the lettuce mixture.

Step 3

Top with sour cream.
