ounces soft goat cheese

2

tablespoons pine nuts

1

ear white corn optional

2

tablespoons minced bottled roasted red pepper

2

tablespoons dried currants

2

tablespoons chopped fresh cilantro

½

teaspoon hot sauce

1

clove garlic finely minced

¼

teaspoon salt

lrg leaves Bibb lettuce (or 8 small)

Step 1

Preheat the oven to 325 degrees. Place the goat cheese in a mixing bowl. Place the nuts on a baking sheet and toast in the oven until golden, about 8 minutes.

Step 2

If using, cut the kernels off the corn.

Step 3

Add the nuts, pepper, corn, currants, cilantro, hot sauce, garlic and salt to the goat cheese and, using your hands, mix thoroughly. Tip: If you donOt like to get your hands messy, use disposable latex gloves.

Step 4

Divide the mixture into 16 equal pieces. Using your fingers, roll each piece into a 1 1/2-inch cylinder. Discard the ribbing from the lettuce, and tear into halves or quarters. Wrap each piece of goat cheese with a leaf and refrigerate. Serve chilled.

Step 5

NOTES : For a variation, try serving this goat cheese on endive, apple slices or crackers.

Step 6

This recipe can be made up to 24 hours before serving.
