Prime Ribs Of Beef

Take meat out of refrigerator 4 to 6 hours before putting in oven. Put in shallow pan and rub fatty side with flour, salt and pepper. Heat oven to 500 degrees. Place roast in oven. Cook 5 minutes per pound, or 15 minutes per rib. Turn oven off. Do not open oven door. Let roast stand in oven for 2 hours.
