Strawberry Rhubarb Coffee Cake

Ingredients

1/2 cup butter
2/3 cup white sugar + ½ cup brown sugar
2 cups flour
1 teaspoon baking soda
1 teaspoon vanilla
1 cup SOUR milk (or use regular milk with 2 Tbsp. white vinegar
1 cup strawberries, trimmed and halved
1 teaspoon cinnamon

Preparation

Cream butter with 2/3 cup white sugar + 1/2 cup brown sugar.

Add egg.

Sift flour and baking soda; then add to creamed mixture alternately with milk and vanilla.

Fold in rhubarb and strawberries.

Pour into 9x13-inch greased and floured pan.

Sprinkle with 1/3 cup brown sugar and the cinnamon.

Bake at 350F for 35-40 minutes.
