Chocolate and Strawberry Stuffed French Toast with Xocai Healthy Chocolate
3 whole eggs
1 1/4 cup nonfat milk
1/2 tsp vanilla extract
1/4 cup ricotta cheese (part-skim)
8 slice whole wheat bread (crusts removed)
8 oz strawberries (1, 8 once container strawberries, hulled and slices)
4 tsp Xocai X Power Squares, chopped
2 tsp confectioners sugar
In a large bowl, whisk together the eggs, milk, and vanilla. Set aside. Place 1 tbsp. of ricotta in the center of the pieces of bread and spread around. Top with about 6 sliced strawberries and a tsp of the chopped X Power Squares. Cover with another piece of bread to make a sandwich. Spray a large non-stick skillet or griddle with cooking spray and preheat. Carefully dip each of the sandwiches into the egg mixture until completely moistened. Then place on the griddle and cook over medium heat for 3-4 minutes per side, until the outside is golden brown and the center is warm and chocolate is melted. Top with remaining strawberries and sprinkle with confectioners sugar.
