Chinese Egg Drop Soup

Ingredients

2 eggs, beaten
2 tablespoons chopped scallions
1/2 teaspoon Asian sesame oil

Preparation

Bring stock to boil, lower heat to simmer, then gradually, in a thin stream, add the beaten eggs, stirring constantly.

Remove from heat and add scallion and oil.

Add ½ cup slivered bamboo shoots and

Dried forest mushrooms, soaked and slivered to the broth.

Simmer 15 minutes before adding eggs.
