Seared Ahi W/ Spicy Mango Vinaigrette

Ingredients

4 4 oz eachs Fresh Ahi Tuna Steaks-trimmed
1 whole MANGO
1/2 teaspoon YUZU PASTE (MORE TO TASTE)
3 tablespoons ORANGE JUICE
1/4 teaspoon GARLIC SALT
3 tablespoons PONZU VINEGAR (OR
1/2 teaspoon SRIRACHA SAUCE

Preparation

Spread the sesame seeds out on a flat dish. Lightly salt & pepper the tuna steaks, then coat in the sesame seeds. Set aside. Peel and slice the mango. Place in a small food processor. Add the yuzu paste, orange juice, garlic salt, vinegar, honey and sriracha. Process until smooth. Set aside. Heat a skillet and lightly coat the bottom with the olive oil. When the pan is hot, place the ahi in the pan and press down with a small pot lid

The start of the summer brings the sweetest, most flavorful, mangos with it. This spicy sauce is a great complement to any fish, particularly, those cooked simply. I’m using Ahi, but any firm white fish will be fantastic as well. Try it with Ono, Halibut, Swordfish, Opakapaka or what’s fresh.
