Stovetop Apple Crisp
5 1/2 tablespoons butter
3 tablespoons pecans or walnuts, chopped
3 tablespoons oatmeal (not instant) quick or regular
2 tablespoons brown sugar
1 cup crisp, tart apples, sliced, peeled if desired
1 tablespoon butter
3 tablespoons golden raisins
1 tablespoon sugar (optional depending on the tartness of the apples)
1 tablespoon white wine
1/4 teaspoon ground cinnamon
Melt 1 1/2 Tbsp butter in a nonstick skillet over medium heat. Stir in nuts, oatmeal, and brown sugar, and cook until mixture begins to brown about 5-6 minutes. Transfer to a plate. Wipe out skillet a bit and return it to the burner.
Sauté apples and raisins in 1 Tbsp butter over medium heat to soften about 5 minutes. Stir in sugar, wine, and cinnamon; simmer 2 minutes. Spoon into bowls
Serve apples topped with crunchy topping. Add a scoop of ice cream or whipped cream to really top it off.
Needed something quick and put this together. This is after a couple trys. Now can have a quick hot dessert in just a few minutes that will WOW guests. Could use chopped Craisins instead of raisins for a twist.
