Irish Pound Cake

Ingredients

2 sticks Butter
1 1/8 cups Sugar
2 1/4 cups flour
1/4 teaspoon baking powder
1/2 pound golden raisins
1/2 pound currants
2 ounces red cherries, pitted
2 ounces almonds, chopped
2 tablespoons Irish Whiskey

Preparation

Mix 1 egg and the sugar in a bowl and then add the lemon rind.

Add the remaining eggs and mix until well combined.

Sift the flour and baking powder into the mixture and add the fruit; mix well.

Transfer the mix to a butter cake pan.

Garnish the top with the chopped almonds.

Bake for 2.5 hours at 325 degrees F.

Remove from oven and coat the top with whiskey

Let cool completely before serving.
