cups Cooked Black beans -or-

1

can (15-oz) Black beans, drained and rinsed

1

Sweet green pepper, diced

1

Sweet red pepper, diced

½

cup Sliced red onions

3

Scallions, minced

1

Lime, juice of

1

tablespoon Snipped fresh cilantro

1

teaspoon Olive **l

1

small Jalapeno, minced

Step 1

With summer right around the corner (I live in Florida, Summer is always right around the corner), I thought I would share my favorite cold tortilla filling.

Step 2

In a large bowl, combine the beans, green and red peppers, onions, scallions, lime juice, cilantro, oil and jalapeno. Serve immediately or chill until ready to serve.

Step 3

Servings: 4

Step 4

We just stuff this in tortillas with a little fat free sour cream
