can (15-oz) Black beans, drained and rinsed |

Sweet green pepper, diced |

Sweet red pepper, diced |

cup Sliced red onions |

Scallions, minced |

Lime, juice of |

tablespoon Snipped fresh cilantro |

teaspoon Olive **l |

small Jalapeno, minced |

Step 1 |
With summer right around the corner (I live in Florida, Summer is always right around the corner), I thought I would share my favorite cold tortilla filling. |
Step 2 |
In a large bowl, combine the beans, green and red peppers, onions, scallions, lime juice, cilantro, oil and jalapeno. Serve immediately or chill until ready to serve. |

We just stuff this in tortillas with a little fat free sour cream |
