Basic Chinese Stock

Ingredients

4 oz Jinhua ham (or Jamón ibérico end)
1 hen (chicken over 1 year old)
4 large dried scallop

Preparation

Bring ingredient to a simmer. Place in 180 degree oven for 8 hours. Clarify with egg white if necessary
