tbsp. sweet butter |

tsp. nutmeg |

c. grated Parmesan |
[edit] Preparation
Step 1 |
Combine cream, butter, salt, nutmeg and cayenne in a heavy saucepan and simmer for 15 minutes or until sauce is slightly reduced and thickened. |
Step 2 |
Whisk in Parmesan and herbs and simmer for another 5 minutes. Taste and correct seasoning. Serve immediately. |
Step 3 |
2 cups sauce, enough for 1 pound of angel hair pasta, 6 or more portions as a first course. |
