Mexican Potatoes

Ingredients

1 pound potatoes, mashed coarsely (4 large)
1 cup onion, diced
1 cup tomatoes diced
1/2 teaspoon fresh ground black pepper To taste
1/2 teaspoon hot chili pepper to taste (½ to 1)
salt to taste
1 clove garlic pressed or minced

Preparation

Fry all ingredients, except potatoes, together for 5 minutes or until theyare clear and tender.

You may add oil or butter to your taste. Add potatoes, fry until heated through. Garnish withshredded cheese.
