Zucchini and Leek Soup

Ingredients

750 grams zucchini
3 mediums carrots
3 mediums potatoes
1 strip chicken stock cubes

Preparation

Place 60g marg in large saucepan. Add vegetables. Saute for a few minutes. Add water to saucepan to just cover the vegetables. Add stock cubes. Simmer until vegetables are cooked. Approx 30 mins. Blend.
