Asparagus and Avocado Salad

Ingredients
1 kg assorted asparagus
2 avocados
juice and zest of a lemon
1 tablespoon white wine vinegar
1/2 tablespoon balsamic vinegar
2 tablespoons olive oil
1 teaspoon castor sugar
1 teaspoon fresh mint
1 tablespoon fresh coriander
2 tablespoons fresh parsley
Preparation

Trim the tough ends of the asparagus.

Plunge into cold water to halt the cooking time and drain well. Set aside.
