Salad

teaspoon veg oil

1

lrg onion thinly sliced

1

teaspoon sugar

3

lrg heirloom tomatoes sliced 3/8"

½

cup chopped pecans Vinaigrette

3

tablespoons balsamic vinegar

2

tablespoons extra virgin olive oil

¼

cup coarsely chopped fresh herbs parsley, tarragon and chives

½

teaspoon salt

¼

teaspoon fresh ground pepper

Step 1

1 Heat veg oil in large skillet over med heat till hot. Add onion; cook 5 min or until softened and lightly browned. Add sugar; stir to coat onions. Cokk an additional 4 min or until golden brown.

Step 2

2 In small bowl, whish together vinegar and olive oil. Whisk in herbs, salt and pepper.

Step 3

3 Arrange tomato slices on serving platter, drizzle with vinaigrette. Top with onions; sprinkle with pecans.
