cups Nabisco 100% Bran |

cups unbleached flour |

teaspoons baking powder |

teaspoon baking soda |

teaspoon pumpkin pie spice |

cups firmly packed brown sugar |

cup corn oil |

cup cholesterol-free egg product |

teaspoons vanilla extract |

cups shredded zucchini |

cup chopped apple |

Confectioners Sugar Glaze (recipe follows) |

Step 1 |
Grease and flour a 13 x 9 x 2 inch baking pan. Preheat oven to 350 degrees. Mix bran, flour, baking powder, baking soda and pumpkin pie spice. With mixer, beat brown sugar, oil, egg product and vanilla until smooth. Stir in zucchini, apple and bran mixture. Spread batter in pan. Bake for 35-40 minutes or until toothpick inserted comes out clean. Cool in pan 10 minutes. Drizzle with Confectioners' Sugar Glaze; cut into squares to serve. Yield 24 servings. |

Confectioners' Sugar Glaze: Blend 2 teaspoons water into 1/3 cup confectioners' sugar. |
