Vegan Chick'n-Pea Salad
14 oz Can Chickpeas (garbanzo beans)
1/2 cup Vegenaise
2 tablespoons Celery (sliced thin)
2 tablespoons Green Onion (white part, sliced thin)
1 tablespoon Green Bell Pepper (chopped small)
1 1/2 teaspoons Dijon Mustard
1/4 teaspoon Crushed Red Pepper Flakes (optional for spice)
Salt& Pepper to taste.
Rinse and drain your can of chick peas, then empty them into a medium sized bowl. With a fork, mash them all until they are completely mashed but still have texture.
Add your Vegenaise, dijon mustard and crushed red pepper flakes and stir together evenly.
Chop all of your veggies pretty small, measure and add to mixture.
Stir everything together well, add your salt and pepper to taste, then serve.
Mixture goes well on a sandwich, with crackers or a baguette.
