cups flour

pch salt

1

teaspoon baking powder

tablespoons sugar

¾

cup unsalted butter

1

egg beaten

1

tablespoon milk (1 to 2)

pounds italian plums quartered and pitted

½

cup sugar

1

teaspoon cinnamon

2

tablespoons flour

Step 1

Combine the flour, salt, baking powder and sugar. Cut in the butter until it is very fine. Add the beaten egg and the milk. Work the mixture with fingers until it is smooth. Press it evenly over the bottom and sides of a 9-inch round tart pan with removable bottom.

Step 2

Place the pitted plums over the crust. Sprinkle 1/4 cup of the sugar over the plums. Combine the remaining sugar with the cinnamon and flour; sprinkle it over the top. Bake at 400 for 40 minutes, or until the plums are bubbling with syrup.
