Yield: 2 large or 4 small

Ingredients

1

large egg

¼

cup egg white

4

slices bread

2

tablespoons Dijon Mustar

1

teaspoon honey

2

tablespoons milk

2

slices ham

4

ounces goats cheese

¼

cup grated parmesan

2

tablespoons butter

¼

cup maple syrup

Preparation

Step 1

Lightly whisk egg, egg white, honey and milk together.

Step 2

Spread 1 tbsp Dijon on one side of 2 slices of bread.

Step 3

Sprinkle with 1/4 of the Parmesan.

Step 4

Top with ham and sprinkle with 1/4 of the Parmesan.

Step 5

Spread 1/2 of the goats cheese on each of the other two slices of bread and place goats cheese-side down.

Step 6

Dip each side of the sandwich carefully into the egg mixture and they both have absorbed the liquid.

Step 7

Preheat oven to 400°F.

Step 8

Melt butter in a cast iron skillet large enough for the two sandwiches. Fry each one for about 5 minutes per side. Then put in the oven for about 5 minutes.

Step 9

Serve hot with warmed maple syrup.
