Sweet Carrot Pie - An Old Time Family Favorite That Survived The Depression

Ingredients

2 cups cooked carrots, pureed in food processor, set aside in a medium bowl
1 cup sugar
1/4 cup light brown sugar, firmly packed
2 eggs, beaten
1 teaspoon salt
1 1/2 cups evaporated milk
1 teaspoon nutmeg
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
3 tablespoons butter, melted

Preparation

Preheat oven to 425 degrees

Mix all ingredients together until well blended

Pour into an unbaked deep dish pie shell or 2 small (regular) 9 inch pie shells

Bake in preheated over for 40-50 minutes or until a knife inserted comes out clean. (The smaller pie shells will bakes for less time)

Center will look soft but filling will set as the pie cools.

Serve at room temperature with coffee or tea...a wonderful end of the meal dessert.

This is a pie made famous during the depression when food and money were almost non-existent. One of the vegetables that families did have and that the government provided in food banks were potatoes and carrots...surprisingly the Sweet Carrot Pie was born!
