Ingredients
2 teaspoons
saikyo
miso
1/2 cup
mayonnaise
1 tablespoon
rice vinegar
2 1/2 tablespoons
shelled
walnuts
3/4 cup
red apple
salt
2 1/2 cups
radish
Preparation
1
Combine the miso, mayonnaise and rice vinegar in a bowl.

Lightly toast the walnuts in a 350 F oven for 8 minutes.
Cool
and roughly
chop.

Cut
with apple into tenth of an inch thick
slices.

Place with apple
slices
in a bowl of water that's been slightly
salted.

Slice
the radish into tenth of an inch thick round pieces.

When ready to
serve,
drain the apple and pat
dry.

Dress
the apple and radish with the miso mayonnaise sauce.

Serve
individual portions with a sprinkle of walnut pieces on
top.
