Strawberry Cornbread

Ingredients

cup All-Purpose Flour

cup Yellow Cornmeal

cup Sugar

4 teaspoons Baking Powder

1 teaspoon Salt

1 Egg

1 cup Buttermilk

2 tablespoons Butter Melted

cup Strawberry Jam

Preparation

Heat oven to 375F. Grease 9 x 9 x 2-inch pan. Combine flour, cornmeal, sugar, baking powder, soda and salt in a large shallow bowl until mixture is well blended; make a well in the center. In a large measuring cup, whisk together the egg, buttermilk and melted butter. Pour buttermilk mixture into well, and stir the ingredients together just until evenly moistened; do not over mix; batter should be lumpy.
