c. salt-free butter

1

c. brown sugar

½

c. white sugar

Egg beaters or Scramblers equal to 2 eggs

1

c. finely chopped dried fruit or raisins

1 ½

c. quick cooking oatmeal

c. flour

½

tsp. baking soda

1

tsp. baking powder

½

c. chopped nuts (optional)

Step 1

Beat together the butter, sugar, egg substitute, baking powder, and soda until well-blended. Add oatmeal and flour. Add fruit or raisins and nuts. Shape dough into 2 long rolls. Wrap in waxed paper. Chill overnight. Slice 1/4 inch thick and place on greased cookie sheet. Bake at 350 degrees 12-14 minutes.
