Insalata Di Barbe Di Fratta Or Monk's Beard Salad

Ingredients

Monk's Beard
1 medium ripe tomato, seeded and chopped
2 anchovy filets
1 teaspoon capers
Juice of 1/2 lemon
Olive oil

Preparation

Wash the monk's beard and separate the stalks. Boil in salted water until tender, about 5 minutes. Drain and run cold water over the stalks to stop the cooking process.

Make a vinaigrette dressing by mashing the anchovy fillets with the capers, then adding the lemon juice and olive oil to taste.

Toss with the monk's beard and chopped tomatoes to serve as a side dish or salad.

Only available in the spring, grab it while you can. When it appears in our local Italian market it gets snapped up by the nice old ladies who have no problem giving you a good shove so that they can cut in front of you!

4 depends on how much monk's beard you can get!
