Saute any combination of vegetables in olive oil for 5-10 minutes with the rest of the ingredients (except bread). Slice the pita open and put the vegetables on top. Drizzle with a little more olive oil, and place on cookie sheet. Add shredded Mozzarella and bake at 350 degrees until cheese is melted. |
