cup Fresh grapefruit juice

3

tablespoons Vodka, optional

1

tablespoon Honey

3

tablespoons Chopped fresh mint

1

tablespoon Grated grapefruit zest

2

teaspoons Grated fresh ginger

1

teaspoon Ground coriander seed

1

Jalapeno pepper, seeded and minced

Step 1

Good with skinless, boneless chicken breasts or turkey breast cutlets, and excellent with swordfish and shrimp.

Step 2

In a small bowl, whisk together the grapefruit juice, vodka and honey. Stir in the remaining ingredients. Place the poultry or fish in a shallow ceramic or glass dish, and add marinade. Turn to coat. Use immediately, or cover and refrigerate, turning occasionally for 1 to 2 hours.

Step 3

Makes about 11/4 cups.
