cup Fresh grapefruit juice |

tablespoons Vodka, optional |

tablespoon Honey |
3 |
tablespoons Chopped fresh mint |
1 |
tablespoon Grated grapefruit zest |
2 |
teaspoons Grated fresh ginger |
1 |
teaspoon Ground coriander seed |
1 |
Jalapeno pepper, seeded and minced |

Step 1 |
Good with skinless, boneless chicken breasts or turkey breast cutlets, and excellent with swordfish and shrimp. |
Step 2 |
In a small bowl, whisk together the grapefruit juice, vodka and honey. Stir in the remaining ingredients. Place the poultry or fish in a shallow ceramic or glass dish, and add marinade. Turn to coat. Use immediately, or cover and refrigerate, turning occasionally for 1 to 2 hours. |
Step 3 |
Makes about 11/4 cups. |
