grams (½ cup) butter

grams (1 cup) sugar

grams (1 ½ cups) self-raising flour

green apples, skinned and cored (2 apples sliced, 1 apple chopped)

cup milk

sprinkling of powdered cinnamon

Step 1

Whisk butter and sugar until creamy and pale; beat in one egg at a time until fluffy. Fold in self-raising flour, cinnamon and chopped apple. Gently stir in milk and pour into a lined tin or greased 8-inch pan.

Step 2

Arrange sliced apples on top of cake batter. Bake in 175 degrees C for 45 mins or until done. Cool slightly.

After all that heavy Christmas and New Year sweets, I do like something a little lighter but yet still reminds me of the holiday season.
I made this wonderfully simple apple cake recently and it filled my kitchen with the heavenly scent of apples and cinnamon.
If you like something sweet but not too demanding on your system, try this for a change.You can have this on it’s own, with some pouring custard or vanilla ice-cream.
