Step 1 |
Putall the ingredients exceptthe oil in a small heatproof bowl and mix them well. |

Continue to heat until the oil is almost smoking. |
Step 4 |
Remove the pan from the heat and pour the hot oil into the bowl with the other ingredients. |
Step 5 |
The sauce should sizzle for a few seconds and is ready for use. |
Step 6 |
In this simple sauce the oil is heated and then poured overthe seasonings to bring out their full taste and fragrance. It is a dipping sauce best used with poultry and meat dishes like Twice cooked chicken and Braised chicken with leeks. |
