[edit] Ingredients

tablespoons spring onions finely chopped

teaspoons fresh ginger finely chopped

2

teaspoons salt

1

teaspoon light soy sauce

3

tablespoons oil preferably groundnut

[edit] Preparation

Step 1

Putall the ingredients exceptthe oil in a small heatproof bowl and mix them well.

Step 2

Heat a wok or frying pan and add the oil.

Step 3

Continue to heat until the oil is almost smoking.

Step 4

Remove the pan from the heat and pour the hot oil into the bowl with the other ingredients.

Step 5

The sauce should sizzle for a few seconds and is ready for use.

Step 6

In this simple sauce the oil is heated and then poured overthe seasonings to bring out their full taste and fragrance. It is a dipping sauce best used with poultry and meat dishes like Twice cooked chicken and Braised chicken with leeks.
