Sprinkle yeast into water. Add 4 cups of flour plus salt;beat well with mixer, 2-3 minutes. Add enough flour to make soft dough. Let raise in mixing bowl, cover with plastic wrap, until double, about 1 to 1 1/2 hours.
Pour onto well-floured surface and knead into soft, smooth dough. Divide into 3 lumps and stretch each lump to fit pizza pan. Mix 1 small tomato sauce and 1 small tomato paste for pizza sauce.
