cup fresh green beans, cut into 1 inch pieces |

cup chicken broth |

tablespoon cooking oil |

tablespoon sesame seed oil |

chicken breasts, cut into 1 inch pieces |

stalks celery, diced |

teaspoons salt |

teaspoon pepper |

cup cashew nuts |

tablespoon cornstarch |

tablespoon water |

Step 1 |
Cook beans for 45 minutes in chicken broth. Heat oils in large skillet, add chicken, scallions, celery, salt and pepper. Cook 7 to 8 minutes, stirring until chicken is done. Add nuts. Cook for 1 minute longer. Combine meat mixture and broth with beans. Stir well. Blend cornstarch and water. Add to mixture. Stir until thickened. Serve hot over cooked rice. Yield: 4 servings. |
