cup fresh green beans, cut into 1 inch pieces

1

cup chicken broth

1

tablespoon cooking oil

1

tablespoon sesame seed oil

2

chicken breasts, cut into 1 inch pieces

2

scallions, chopped (green onions)

2

stalks celery, diced

1 ½

teaspoons salt

1

teaspoon pepper

½

cup cashew nuts

1

tablespoon cornstarch

1

tablespoon water

Step 1

Cook beans for 45 minutes in chicken broth. Heat oils in large skillet, add chicken, scallions, celery, salt and pepper. Cook 7 to 8 minutes, stirring until chicken is done. Add nuts. Cook for 1 minute longer. Combine meat mixture and broth with beans. Stir well. Blend cornstarch and water. Add to mixture. Stir until thickened. Serve hot over cooked rice. Yield: 4 servings.
