cup Sifted flour |

teaspoon Baking powder |

teaspoon Salt |

Egg, beaten |

cup Beer |

pound Shrimp, peeled and deveined |

tablespoon Cornstarch |
1 |
tablespoon Sugar |
¼ |
cup Vinegar |
½ |
cup Pineapple juice |
1 |
cup Pineapple chunks |

Step 1 |
1) Sift flour, baking powder, and 1/2 ts salt together in a bowl. Beat in egg and beer. |
Step 2 |
2) Heat oil to 375 degrees in deep skillet or deep fryer. Dip shrimp in batter, coating well. Fry shrimp, a few at a time, until golden brown. |
Step 3 |
Drain on paper towels and keep warm. |
Step 4 |
3)In saucepan, combine cornstarch, sugar, 1/2 ts salt, and vinegar. Add pineapple juice, cook over low heat, stirring constantly, until sauce thickens. |
Step 5 |
4) Arrange shrimp on serving platter. Place pineapple chunks around shrimp. |
