Asparagus-Mushroom Salad

Ingredients

2 pounds fresh asparagus, not too big
1/4 pound mushrooms, sliced
2 tablespoons rice or wine vinegar
1/2 cup olive oil
1/4 teaspoon mustard
2 garlic cloves, crushed in a press
fresh clives, snipped
1/4 teaspoon fresh thyme
1/4 teaspoon fresh oregano
pinch- red papper flakes

Preparation

Prepare asparagus by snapping off ends.

Blanch 4-5 minutes then drain and chill..

Mix remaining ingredients except mushrooms for the dressing.

Pour dressing over asparagus and chill.

Add mushrooms to salad.
