Berry Cheese Blintzes

Ingredients
10 prepared crepes
3 cups
cottage cheese
2 tablespoons
orange juice
2 tablespoons
sugar
2
egg yolks
3 tablespoons
butter
2 bags
frozen mixed
berries
1 cup
sour cream
Preparation

Drain cottage cheese in strainer at least 20 minutes. Pat
dry
with paper towels.

Blend
cottage cheese, orange
juice,
sugar, and egg yolks in medium
mixing
bowl until well combined.

Add 2-3 heaping tablespoons cheese mixture into center of crepe.

Fold
crepe in on both sides, then
fold
from bottom to
top
twice (like a burrito).

Melt
small amount of butter in
frying
pan (just enough to
brown
crepes).

Brown
folded
crepes in butter on each side until golden.
7
Microwave
berries on high for 2-3 minutes, s
tirring o
ccasionally, until w
arm.
8
Spoon
berries over crepes.
9
Top
with dollop of
sour
cream.
