Ingredients
3 large
carrots,
peeled
1/4 cup
vegetable oil
1/2 cup
dried currants
1/4 cup
chopped fresh
mint
1
Juice of
lemon
and 1
orange
1/8 teaspoon
Ground
pepper
Preparation
1
Coarsely
shred
the carrots, using a food processor or a mandoline.

Toss carrots in a
mixing
bowl with remaining ingredients.

Cover and
refrigerate
a few hours.

Serve
very cold.
