Citrus Plantain Fritters

Ingredients

FOR THE FRITTERS:
2 ripe plantains
½ cup cilantro, chopped
2 limes, juiced
1 TSP Garlic Powder
1 TSP Paprika
1 TSP Onion Powder
1 TSP Pepper
1 TSP Salt
1 egg
¼ cup All-Purpose Flour
4 TBSP Olive Oil
FOR THE AIOLI:
¼ cup Nonfat Plain Greek Yogurt
2 TSP Paprika
1 TSP Garlic Powder
Juice of ½ a lime

Preparation

Preheat oven to 400 degrees Fahrenheit. In a medium bowl, mash plantains with a fork or a potato masher until no large chunks remain. Add cilantro, spices, egg and flour. Mix together until completely combined.

In a large frying pan, add olive oil. Turn on medium high heat. Once oil is shimmering, add ¼ cup of plantain batter per fritter to oil. Each batch should consist of about 4-5 fritters so as not to overcrowd pan. Once fritters are golden brown (usually takes 30 seconds-1 minute) flip over and continue to cook on other side until golden brown. Remove from oil and place on a large baking sheet.

Repeat for the rest of the batter ( makes about 8 fritters). Once all fritters are done an on baking sheet, place in over for 10 minutes. Serve immediately.

Meanwhile, make aoli. Add ¼ cup of greek yogurt to a small bowl. Add paprika, lime and garlic. Mix together until evenly combined. Refrigerate until ready to serve.
