Chicken Patties with Sun Dried Tomatoes, Artichoke Hearts & Spinach


3 lbs lean ground chicken
6 oz oil packed sun dried tomatoes plus 2 Tbsp of the oil
12 oz jar marinated artichoke hearts, drained
4 cloves garlic
4-5 handfuls of baby spinach
salt & pepper


Place the sun dried tomatoes along with 2 Tbsp of the oil, artichoke hearts, garlic and spinach into a food processor. Pulse until finely chopped but not so far as to make it a paste.
Gently stir the mixture in with the ground chicken and season with salt and pepper.
Form into approx 1/2 lb patties.
Grill over a medium high flame for about 5 minutes per side {timing will bay depending on your grill of course}.
These are great topped with a slice of fresh mozzarella or provolone as well.


I never thought I’d be the type of person that would chose a chicken burger over a beef burger but here I am in love with the flavors of these Chicken Patties with Sun Dried Tomatoes, Artichoke Hearts and Spinach and not missing the beef at all! These patties are incredibly juicy and in every bite you get a little bit of all the goodness! These are easy to make and freeze great, so go ahead and make a double batch because you will no doubt want them again asap!
