Recipe: Garlic-Wine Chicken Breasts

It’s diet time, and that means people are eating chicken breasts. If I were a chicken this time of year, I’d hide. Chicken breasts are low in calories, a low-fat source of protein and quick to cook. While I generally prefer the dark meat, this recipe produces delicious chicken breasts that are every bit as moist and tender as the dark parts. There is a small splurge of butter that adds a richness without much in the way of calories. So indulge, diet or no.
Ingredients

chicken breasts (about 1 pound) |

cup flour |

teaspoon paprika |

tablespoon olive oil |

tablespoon butter |

clove garlic, chopped |
¼ |
cup white wine |
Preparation
Step 1 |
Place chicken on cutting board between 2 sheets of plastic Pound well until thin (about 1/4 inch). |
Step 2 |

Step 3 |
Drag breasts through flour until well coated. |
Step 4 |
Place prepared chicken on plate until ready to use. |
Step 5 |
Put olive oil and butter in skillet and turn heat to medium. |
Step 6 |

Add garlic and cook for about two minutes. |
Step 8 |
Add chicken to pan and sprinkle with salt and pepper. |
Step 9 |
Don’t move chicken around. |
Step 10 |
Cook 5 minutes, then flip and repeat. |
Step 11 |
Remove chicken. |
Step 12 |
Put wine in pan. Cook down 2 minutes. |
Step 13 |
Return chicken to pan |
Step 14 |
Leave on low heat while sauce dissipates. |
Step 15 |
Serve hot. |
