Figs

1

cup Ricotta cheese

2

tablespoons Ground almonds

1

teaspoon Grated lemon rind

1

teaspoon Grated orange rind

1

teaspoon Vanilla extract

1

teaspoon Almond extract

¼

cup Honey

Chopped toasted pistachios

Step 1

Remove stems from figs. Cut almost in half and again crosswise to open up to stuff.

Step 2

In food processor mix together ricotta, ground almonds, lemon & orange rind, vanilla & almond extract & honey. Process to blend.

Step 3

Stuff each fig with flavored ricotta. Garnish with toasted nuts, some diced fresh figs and drizzle with honey.
