Fragrant Spiced Pulau (Rice)

Ingredients

1 1/2 cups basmati rice
2 1/2 cups water
1 tablespoon butter
1 tablespoon vegetable oil
2 cardamom pods
2 wholes cloves
1/2 teaspoon cumin seeds
1/2 teaspoon peppercorns
1 large onion, finely chopped
1/4 teaspoon cinnamon
1/2 teaspoon salt
2 tablespoons butter

Preparation

Rinse rice then place in a bowl and cover with the water

Allow to soak for 20 minutes

In a large saucepan heat the butter and oil over medium heat

Add cardamon pods, cloves, cumin and peppercorns and cook for about 2 minutes

Add the onion, cinnamon and bay leaf and cook for about 10 minutes or until onion is soft and golden

Add the rice with the water to the saucepan and mix into spice and onion mixture

Add salt and bring to a boil

Reduce heat to low, cover and simmer for about 20 minutes

When ready remove from heat and remove bay leaf

Add butter and fluff with a fork
