Ginger chilli beef fillet starter (Serves 6)

Ingredients

1 x pave loaf (sliced)
3 x beef fillets
3 tbsp. of Dijon mustard
1 x small green chilli (chopped)
1 x 1cm of freshly grated ginger
1 x garlic clove
1 x large lemon
4 x tbsp. of olive oil
Sprig of thyme
1 tsp of oregano
Salt & pepper to taste

Preparation

Remove the beef fillets from the fridge and place onto some kitchen paper for 20 minutes,

Add the chilli, ginger, garlic, lemon, olive oil, oregano, and thyme to a clean bowl, mix, taste and set aside. Add more herbs or lemon / oil to taste,

Heat a griddle pan until hot,

Add the slices of pave to toast on both sides and harden,

Being careful not to burn yourself, clear any crumbs on the griddle pan,

Season the beef fillets and then add to the griddle pan and cook to your preference. I like medium rare to medium, so will cook for 4 minutes on each side,

Place the beef into the marinade, cover and leave to rest for 10 minutes,

Spread a little Dijon mustard on the sliced of grilled bread,

On a chopping board, thinly slice the beef and add 2 to 3 slices onto the grilled bread,

Spoon a little of the marinade on top of the beef so it soaks into the bread,

Repeat the process until you have run out of beef. There will probably be some bread leftover; however you can use that to have on another day with some cheese etc.,

Eat warm or cold and quickly as these are moreish.

This is a complete taste bud explosion. It’s only been in the last 3 years I have really appreciated a good steak, and since then I have been experimenting with different flavours to see what works well. This is a simple, tasty starter which only requires your hands to eat with.
