Easy Vegetarian Chili

Ingredients

2 mediums onions, chopped
1 clove garlic, minced
1 teaspoon olive oil
2 mediums sweet potatoes, washed and cubed
1 envelope/packet of chili seasoning
1 ounce can whole peeled tomatoes - tomatoes cut into large
1/2 cup uncooked bulger wheat
2 ounces cans black beans, thoroughly rinsed and drained

Preparation

In a large pan, saute onions and garlic in olive oil, until onions are soft and everyone comes into the kitchen to ask what smells so good.

Add 5 cups of water and bring to a rolling boil.

Add sweet potatoes to the water and boil for 10-12 minutes. Sweet potatoes should still be slightly firm when forked.

Reduce heat to a simmer, and add chili seasoning, tomatoes, bulger wheat.

Simmer 9-10 minutes, then add beans. If it seems a bit too thick, add some of the reserved tomato juice.

Continue to simmer until heated through.
