Recipe: Easy Vegetarian Chili edit

medium onions, chopped

1

clove garlic, minced

1

teaspoon olive oil

2

medium sweet potatoes, washed and cubed

1

envelope/packet of chili seasoning

1

ounce can whole peeled tomatoes - tomatoes cut into large chunks, juice reserved separately

½

cup uncooked bulger wheat

2

ounces cans black beans, thoroughly rinsed and drained

Step 1

In a large pan, saute onions and garlic in olive oil, until onions are soft and everyone comes into the kitchen to ask what smells so good.

Step 2

Add 5 cups of water and bring to a rolling boil.

Step 3

Add sweet potatoes to the water and boil for 10-12 minutes. Sweet potatoes should still be slightly firm when forked.

Step 4

Reduce heat to a simmer, and add chili seasoning, tomatoes, bulger wheat.

Step 5

Simmer 9-10 minutes, then add beans. If it seems a bit too thick, add some of the reserved tomato juice.

Step 6

Continue to simmer until heated through.
