Radish Confit

Ingredients

450 grams red radishes, sliced into thin half-moons
1 tablespoon minced ginger
2 cups simple syrup (2:1 / sugar:water)
teaspoon dried crushed chillies
teaspoon salt

Preparation

Place all ingredients in a non-reactive saucepan and simmer until you're left with a syrup-like consistency and all the radishes are glazed. Cool and serve.
