Ultimate Veggie Burgers For The Grill

Ingredients

1/2 cup black or red quinoa, cooked
1 onion, finely chopped
1 large garlic clove, crushed
1 medium carrot, grated
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon paprika
1/2 teaspoon chili powder
lemon, juiced
1/2 teaspoon Himalayan Salt

Preparation

Cover lentils with 2 cups of filtered water. Bring to a boil and simmer until cooked - about 20-30 minutes.

When cooked, green lentils are soft but hold their shape.

Gently fry the onion in a little oil until beginning to soften.

Add the garlic and carrot and continue to fry until soft.

Stir in the cumin, coriander, paprika, and chilli and cook for a minute.

Add the onion mixture and rice to the cooked lentils and roughly mash the mixture.

Add the lemon juice, season with salt and pepper to taste and allow to cool a little.

Shape the mixture into patties and roll them in corn meal or gf flour.

Voila, ready to toss on grill.

Another option is to fry them in a skillet for a few minutes and then toss on grill.
