Chilled Avocado Soup

Ingredients

1 cup yogurt
1 cup water
2 limes, juiced
1 tablespoon chipotle sauce
1 teaspoon salt
chopped English cucumber, for garnish
chopped red bell pepper, for garnish

Preparation

Scoop out avocados into a blender. Add stock, yogurt, water, lime juice, chipotle sauce and salt; blend until smooth.

Chill in refrigerator prior to serving.

Garnish with cucumber (with peel on), red pepper, and a dollop of yogurt in the center.

About

This is a nice refeshing soup with a hint of spice that is wonderful on a hot summer evening. Inspired by soups from Mexico, the colors of the garnish make up the Mexican flag. Add more or less chipotle to taste.
