Alligator Balls

Ingredients

1 pound Chopped alligator meat
1 Egg
1 tablespoon Finely chopped onions
1 tablespoon Finely chopped celery
1 tablespoon Finely chopped parsley
2 tablespoons Finely chopped shallots
2 teaspoons Lemon pepper
teaspoon Salt
1 cup Cooking oil
Flour to dredge

Preparation

Combine all ingredients, form 1 inch diameter balls, allow to set one hour. Dredge in flour and fry till brown. Serve hot.
