PASTA AND C'ANCIOVA MUDDICA ATTURRATA" typical Sicilian dish (pasta sauce Mollica, anchovies, raisins and pine nuts)
Ingredients for 4 people:
500 g of beads of Brother Miller PROPELLER
2 cloves of garlic
250 grams of concentrated
80g anchovies in oil
250 g breadcrumbs
250 g raisins and pine nuts,
extra virgin olive oil
water to taste
salt and pepper to taste sugar to taste
Put oil in a pan and soffrigere the 2 cloves garlic, brown them and then add the anchovies, and allow to dissolve.
When the anchovies have melted, pour in the concentration, dilute the whole with water.
Add the raisins and pine nuts.
Season the sauce with salt, sugar and pepper.
Let cook on low heat until the sauce has thickened, then remove from heat and let stand.
Meanwhile, toast the breadcrumbs in a pan with a little olive oil.
Prepare the pot for the pasta when ready and mix it all with a few ladles of sauce. Pour the pasta on plates, add more seasoning and then put it on the toasted breadcrumbs.
