DIY Tapenade and Tapenade Bread

Ingredients

Tapanade:
1 cup good quality black olives, pitted
1 table spoon lemon juice
2 table spoons capers
2 table spoons extra virgin olive oil
1 table spoon parsley
1 tea spoon oregano
Tapanade Bread:
3 ½ cups flour
¾ tea spoon salt
2 tea spoons yeast
1 table spoon sugar
100 ml warm water
200 ml milk
50 ml extra virgin olive oil
1 egg white
For filling:
2 table spoons tapande paste
¼ cup softened butter
For glaze:
1 egg yolk
1 table spoon water
1 table spoon extra virgin olive oil
A dash of black pepper
To sprinkle over glaze:
Sesame seeds (not toasted)
Black sesame seeds (optional)

Preparation

To make tapenade, mix all ingredients in a food processor until you get a thick paste. Store in the refrigerator for future use. Serve with crackers and bread sticks.

To make the bread:

Mix yeast, water, sugar and let it rise for 10 minutes

Sift flour and sugar; set a side

Mix all wet ingredients (yeast mixture, warm milk, oil, lightly beaten egg white) in your stand up mixer

Add flour and start kneading for around 7-9 minutes until the dough hooks itself on the hook and the mixing bowl is clean

Oil another bowl lightly and put the dough covered with a clean towel; let it rise for an hour until double in size.

Take out the dough and divide into 12 pieces (as equal in size as possible)

Take one to work with and leave the others covered in a clean towel to prevent dryness

Roll your first piece into a long rectangle

Spread around ½ tea spoon to 1 tea spoon of butter and ¼ tea spoon of tapande on top (avoid edges so they would close tightly)

Roll dough from the long side; seal the bottom and edges with the back of your palm

Roll the dough a bit to make it longer, then shape it into a knot and tuck both ends underneath the roll and put it on a baking sheet lined with parchment paper. Repeat with the rest of your dough.

Once done, cover the rolls and let them rise for another 15 minutes.

Mix the glaze ingredients with a fork, brush some of the glaze on top of each roll and sprinkle with sesame seeds.

Heat your oven to 190 c and place your rolls in it for around 15- 25 minutes until done and golden brown.

Serve hot with a some extra virgin olive oil and your favourite pasta dish...
