Ingredients

8 pounds leg of lamb, boned
1 med. onion, chopped
2 tablespoons butter
1 6 oz. can whole mushrooms
1 4 ½ oz. jar stuffed olives, sliced
3/4 cup chopped parsley
1 teaspoon salt
2 teaspoons poultry seasoning

Preparation

Stuff leg of lamb with all ingredients which have been mixed well together. Fasten with skewers. Roast at 325 degrees for 40 minutes per pound.
